Choosing the right commercial slicer for your restaurant can be a difficult task; this is why you need to know the following aspects that you usually take on inside your kitchen. Below are the things you need to know before purchasing a commercial slicer.

  • How much you’re slicing
  • How long you’re slicing

 

What Are You Slicing?

All commercial slicers are designed to slice meat and vegetables.If you are intending to slice large volumes of cheese with your slicer it would be beneficial to look for a heavier duty machine. 2

 

But, you need to be careful in using your commercial slicers. Foods with seeds such as avocados, peaches and apples are not supposed to be sliced in a commercial slicer because the seeds can cause damage to your equipment.

In choosing the commercial slicer you want to purchase, you need to analyse if you need the ones with a fine edge or serrated edge blades.  A fine edge blade has a smooth edge and serrated edge has teeth like a bread knife.  Fine edge blades can be used for slicing thin ham for prosciutto or fish that will be used for sushi.  On the other hand, serrated edge blades are for slicing hard crusts like breads.

How Much Are You Slicing At Any Given Time?

Manual slicers are always convenient for made-to-order or small batches of meals.  On the other hand, automatic slicer helps reduce employee fatigue and it can provide a consistent product.

How Long Are You Slicing?

  • Less than 2 hours or 700 slices – Light Duty
  • 2-4 hours a day or between 700 and 1400 slices – Medium Duty
  • All day operation or over 1400 slices – Heavy Duty
